I’ve been meaning to write an update on here a while back but it’s been so hectic here. I’ve got so many things I want to share with you.
Work has been great, I’ve been loving working at the coffee shop. I swear it’s like my dream job. Over the past couple of weeks I’ve been getting more hours too which is great. I would quite happily work there everyday.
I’ve been so into baking cakes recently. especially cupcakes! I can’t explain it! I’m literally obsessed. I’ve been lucky enough to have the opportunity to sell some of the cupcakes and cakes that I make in the cafe. It’s so nice getting lovely positive feedback about my cakes. It’s also nice to hear about peoples thoughts about different flavours of icing or cakes they would like to try. It gives me much inspiration!
I’ve also been making my way around to different coffee shops. I found this lovely little coffee shop called The Little Kitchen. I absolutely love the atmosphere of this cafe. I ordered my standard cappuccino. I will be visiting again very soon.
So yes! It’s certainly been a very busy couple of weeks. I want to start vlogging more of my days with you guys so be sure to head over to my YouTube channel to see those videos.

Welcome to Blogmas day 22! Today has been extremely busy as I’ve spent the good part of this afternoon baking.
I decided that I would make four different flavours this Christmas.
I added chocolate chips to the cupcakes to make them extra chocolatey. I topped each cupcake off with some piped vanilla buttercream icing.
I added a few sprinkles on to the top of each cupcake.
I made 48 cupcakes. 6 of them I will be giving to one of our neighbours. 12 of them I will be bring with me on my trip to Kent and I will be giving them to my boyfriends family. The rest of them will be for family and friends.
I love baking, especially around Christmas time!

Welcome to Blogmas day 16.
One of the amazing things about Christmas is the baking.
A few days ago I spend a couple of hours doing some Christmassy baking. I decided to make some coloured vanilla cookies and some caramel cupcakes.
I’m not too happy with how the flavour of the cookies turned out but I will be giving them another go at some point. The caramel cupcakes were beautiful. I added chocolate chips in the mixture too. I topped them off with pink vanilla buttercream icing and some white sugar sprinkles.
I decided that this year I will be making about 5 sets of 6 cupcake boxes full (30) to give away to friends and family. I’m so excited as it will give me the chance to make a few different flavours and topping combinations.
Over the next week I will start putting these boxes together.

How’s your December going?
Who else has bought some Christmassy treats for their pets? Penny (my parents cocker spaniel) has been spoilt this year. I’ve bought her an advent calendar (I will be honest, I think she is getting far too used to having a doggy chocolate in the mornings)
I also picked up some doggy mince pies from The Range. Penny loves them!
Pets are apart of the family, why shouldn’t they experience the gift giving too?

Welcome back to Blogmas day 12.
Today I’m going to be sharing with you some of my favourite festive homemade hot chocolates.
- 1/2 cup of whole milk
- 5oz of chopped chocolate
- 1/4 heavy cream (you can add, but I decided not to)
- Topping and sauce
I used the same chocolate recipe and I changed the toppings and syrups to suit the taste of what I wanted.
I topped the hot chocolates off with Christmas sprinkles or different sauces. I don’t know about you, but I don’t think there is anything better than a drinking a hot chocolate and cozying up on the sofa watching a Christmas film.
What I love about making hot chocolates is that you can literally add anything you want to them.

Welcome to Blogmas day 7. Today I want to share with you my favourite Christmas recipe. At Christmas time I really love to bake cookies rather than just cupcakes.
This year I have been making festive vanilla cookies!
Here’s the recipe that I have used to make these:
- 250g all purpose flour
- 125g self-raising flour
- Pinch of salt
- 250g unsalted butter
- 125g superfine sugar
- 1 egg yolk
- 1 teaspoon vanilla extract
Bake at 200c (Gas 6) for 12-16 minutes.
I feel that this recipe is fantastic for all year round cookies.
I finished the cookies off by using some easy roll green icing. I used the same cookie cutters as I used to make the cookies to cut the tree shapes out of the icing.
Lastly, I used some icing pens to decorate the rest of the trees. I let them set then they were ready to enjoy!

Happy Thursday! How is your week going so far?
I’ve been trying my best to eat healthily and exercise regularly. It’s making me feel much better and I’m really hoping that I manage to continue this cycle.
I want to share with you what I ate yesterday.
I love love love the Oat So Simple golden syrup! It’s hands down my favourite.
I put together a simple salad. I lightly fried the mushrooms and peppers in toasted sesame oil and garlic.
I made a vegetable cooked dinner with vegetable gravy. It was very delicious!
Over the past month I have been preparing most of my meals in advance. I’ve tried to do meal prep on Thursdays and Sunday’s. It’s been working out quite well I feel. It’s helped me be more decisive about what I want to eat, as well as helping me cook healthy and balanced meals.
I work a job that changes my shifts every week, so having a solid meal prep schedule helps me keep on top of eating a balanced amount of meals. I’m the sort of person that could quite easily skip meals and not think too much about it. Having a meal plan allows me to work my meals times around my hours at work. The key to keep this going is to stay organised.

This year has gone so quickly. I feel like I say that every year.
Looking back on 2016 I realise just how many different things that I have experienced. Some good, and some bad.
When a year goes as quickly as this year has, it makes me realise just how important it is to do what you love, always! Life is too short to do something that you hate. Or be surrounded by people or situations that make you uncomfortable.
So with that all being said. I want to make some big changes to myself, my life and the way that I think when 2017 comes around.
Every year I make new years resolutions. I think it’s important to set goals, I think that it allows for self- improvement. Which I always think is important.
These are the resolutions I plan on setting for the New Year. Hopefully I will be able to stick to at least five of them.
- Be more self-confident.
- Appreciate my friends and family more.
- Be confident in the things that I want and just go for it!
- Make more film content.
- Blog more.
- Exercise more regularly.
- Move back to South Korea.
- Take TOPIK test.
- Learn how to cook more types of food.
- Stand up for what I believe in.
- Attend blogging events.
- Build blog following.
- Start a YouTube Channel.
- Do more of what I love.
So that’s it. 🙂
